Meatless Mondays

I don’t have time to write a brilliant and insightful post about this, but I heard this story on the news this morning and felt that it should be shared with our blogging world.  What a simple concept:  Meatless Mondays.  The challenge is not to go totally vegetarian, but to simply make Monday a day without meat.  I really felt that the discussion in this report about the dramatic increase in our daily consumption of meat products over time was compelling and their simple solution is one that any family can start.

Now is the time.  It’s summer.  There are tons of fresh fruits and vegetables!  Find a recipe that sounds fantastic and do it!  Make your next Monday Meat-free.  Have Monday night potlucks that are meatless.  Invite your carnivorous friends!  Talk to them about why you think it’s important.  Come on, it’s what’s best for the health of your family!  It’s what’s best for you!  The challenge is simple, the veggie options are vast.  Start today!  Start thinking about a new way to eat and a new way to find community around the table. You and the world will be better for it.

  1. I forget to eat meat pretty regularly, but just so happened I had leftover chicken tacos that sounded great for breakfast. Warn me next time!

    However, for lunch I had banana bread (homemade) and an incredible peach. Dinner was lentils, tomatoes, and a cheese quesadilla. And desert was a summer shandy (lemonade beer) on tap at my roommate’s comedy show. On TAP! I’m glad beer is vegetarian!
